When I started the journey of writing my cookbook I had no idea it would impact people life in such an incredible way ❤️

You inspired me so much that yesterday I decided to enter for the Taste Of Canada Awards. 
Im sure I won’t win because you know Im not a chef and around me there is nothing fancy but I wanted to try because why not? Im leader and a woman entrepreneur that like to take risk and try different things. I think there is always something to learn from our experience so we will see what this experience will bring me 🇮🇹❤️

Chicken Parmigiana not Authentic Italian but delic Chicken Parmigiana not Authentic Italian but delicious, my daughter love it. This dish is something similar that I make called pizzaiola but with cheese. 
It can be a good middle week dinner, you serve it with some white rice or white pasta and you have a good dinner. Also don’t forget the bread for the scarpetta at the end ( bread to clean the plate from the sugo) 
Mamma Marzia’s Tips: 
🥰Make a good simple tomato sauce, please do not buy pre made
🥰Use thin cutlets so they fry fast
🥰You can cook the chicken in the oven instead of frying 
🥰You can use other cut like veal( our favourite), turkey and pork. 
🥰Make sure the meat is fully cooked 
🥰When you fry please remember to be sure to put the meat in HOT oil otherwise the result will be soggy meat. 
Ingredients: 
🥰6 chicken cutlets 
🥰2 eggs
🥰salt and pepper
🥰Half cup breadcrumbs 
🥰300 ml oil sunflower 
🥰500 ml Tomatoes sauce cooked
🥰Half cup mozzarella or less
🥰2/3 tablespoons Parmigiano Reggiano 
I cooked the Parmigiana on the stove 😍but you can bake for 10 minutes 

Prepare your station with the chicken, a bowl with the 2 eggs,  bread crumbs and a plate to put the breaded cutlets on. 
Mix the 2 eggs adding  salt and pepper. Put the chicken in the eggs rotating to evenly coat each fillet in the mixture. Dip the chicken into bread crumbs mixture to coat evenly. 
Heat oil in a large frying pan over medium high heat until hot. Fry the chicken cutlets until golden and crispy. Dry the excess on oil withnpaper towel
🥰 Put the already tomatoes sauce in a large skillet ( you will have to make it before making the chicken) also leave 1/4 cup out for the top 
When the sugo is ready add some Parmigiano Reggiano and mozzarella 
🥰Add the cutlets and cover them with more sauce on top
🥰Sprinkle more parmigiano and more mozzarella 
Cover with a lid and cook until the cheese is all melted. Don’t forget to add the sprinkle of love

I received so many messages last few days from friends and followers and I can’t believe I miss the first episode last week. 
I was able to record it the first episode about Naples and The Amalfi Coast last night and I watched it twice ❤️🙏 Incredibly gorgeous. 
I loved the second episode too about Lazio. I went to Rome couple time and its so beautiful. This morning I woke up dreaming to be in a restaurant in Rome eating an Authentic Carbonara with a Maritozzo ❤️
Im Speechless and I can’t wait for next week and next episode about Tuscany ❤️

Sunday is important in every Italian family. Its Sunday is important in every Italian family. 
Its the day that moms cooks all day to make  special meal to share  with the family and these kind of Sunday are unforgettable ❤️
If I have to choose a dish that reminds me Sunday in Italy the meat sauce / il sugo di mia mamma would be number one on my list.
I still remember been awake by the smell that used to come upstairs in my bedroom. 
I used to wake up, get ready and while I was 
Walking down the stairs I was thinking about the Sugo and the bread together ❤️
My favourite breakfast was dipping the bread in the sugo to check if it was good or not 🤪
My mom would always say “ hopefully You will leave some sugo for the lasagna” 😂😂😂
Now my daughter took over and she does the same and I repeat the same thing that my mom used to say screaming of course #classicitalian
This is a little video of my mom recipe Bolognese sauce/ sugo alla Bolognese that is in my cookbook.
Before I published my cookbook I used to teach Italian Cuisine and this is one of the most liked recipe. 
This sauce/ sugo will take any kind of pasta to another level, seriously try it ❤️
Im so PROUD that my mom recipe of sugo has been used by hundreds Canadian and Italian Family ❤️❤️❤️❤️🇮🇹❤️❤️

Throw back to last year like today I made my famil Throw back to last year like today I made my family favourite: lasagna. 
I make it the Authentic Italian way like my mom taught me using my mother in law Fresh Pasta recipe. 
I do not use ricotta but beschamel sauce and I sprinkle every layers with real @parmigianoreggianousa and I don’t use mozzarella
Fun fact: my mom is from Naples but she always made Lasagne alla Bolognese/ bolognese lasagna and rarely made the Neapolitan Lasagna❤️
We simply love the Bolognese Lasagna, its so creamy . 
The combination of the fresh hand made pasta, the meat sauce cooked for hours and the beschamel sauce are just an explosion of flavour, after a bite you will scream #mammamia

Sharing with you today a recipe that reminds me my Sharing with you today a recipe that reminds me my nonna in Italy and Carnival when I was a kid. Unfortunately she is not with us anymore but I still remember when she used to make frittele/ Italian Donuts that we used to make for Carnival. 
Ingredients for 20 frittelle:
 🥰 2 eggs
🥰2 tbsp sugar
🥰200 g flour ( 1 cup+ 1/4)
🥰100 ml milk lukewarm 
🥰Lemon zest 
🥰Orange zest
🥰2/3 cup raisins 
🥰1/4 cup grappa or water
🥰1 tbsp baking powder 
🥰600 ml oil I used Peanut 
🥰Sprinkle of love
🥰Icing sugar

Method: 
Soak raisins with grappa or water for al least 15 minutes. You can also use another liquor or water
With a whisk Beat the eggs with sugar. Add milk, orange zest and lemon zest, mix. Mix flour and baking powder together and add it to the mixture. Mix very well until there are no lump. Squeeze all the liquid from raisins and add it to the batter. Mix. 
The cake batter has to be kind slow. You will need 2 spoons to deep fry them. 
Bring a pan to fry, I usually use a tall one like in video. Pour the oil and bring it to 165C/ 320 F ( this is important, I have a thermometer) . With the tablespoons grab some batter and let it slide in the hot oil with the other spoon. The oil MUST be HOT. Let them fry until they have a nice gold colour and if it necessary turn the heat down a bit. 
I always start with medium high temperature on my stove and when Im half done I slightly turn it down to medium.
Put them on a plate and check if they are cooked inside ( I always check one)
Mamma Marzia’s Tip: If the frittelle are not cooked enough just put them in the oven at 300 for 5 minutes 😍
When they are done sprinkle them with icing sugar 
Buon Appetito 😋 and be careful because they are very addictive 😍

Pasta al Baffo/ Creamy rose sauce it’s a fast dish perfect if you don’t have much time and so its delicious that you will lick your whiskers 😍
The sauce is made with Italian Ham gently stir fried with butter and onion if you like, whipping cream and tomatoes of your choice. All the ingredients are cooked  perfectly together, a real explosion of flavour and creaminess of course don’t forget the Parmigiano Reggiano at the end freshly grated ❤️
Also parsley gives a nice flavour of freshness 
My family loves it and I literally make it in 15 minutes.

Do you like leftover cotolette/ cutlets? My mom n Do you like leftover cotolette/ cutlets? 
My mom never throw anything away and she used to make us panino con cotoletta/ bun with leftover cutlets. 
I used cutlets but you can use any kind of meat leftover, swiss cheese, mayo for the husband, pesto rosso, artichoke in vinegar sliced, tomatoes, salt and pepper and LOVE ❤️
I grilled everything on my panini griller but you could you a stir frying pan with some oil.
Grill it until the cheese are melted and perfectly combined with the other ingredients. Simply amazing, simply Italian ❤️❤️❤️❤️

What  is your most favourite love story? For me is definitely mine ❤️
I met my husband in 1995 in Italy, he was spending the summer with his family in Italy ❤️
We met through my best friend that she is his cousin. 
When We met we were young and free and had lots of fun together, summer in Italy are so much fun. 
We used to go out every night either restaurant or pub first and then dancing until 4 or 5 o’clock in the morning 😂🥳🥳🥳🎉🇮🇹
It was always fun  to go out with him and all my other friends we had a 💥 At that time I was a party girl 😂💥🤩🎉💄💄🌶🍕

In 1995 not everyone knew where Vancouver was and my husband used tell this story that Vancouver was surrounded by Igloo, this because us Italians thought that Vancouver was close ( very close) to North pole.
Of course one day when he asked me to come to visit Vancouver I said “ No way, I will never come to the North Pole” 😂😂

The times that he had to leave to go back to his Country I was always sad for days. At that time I couldn’t recognize my feelings for him yet but I think I was already in love ❤️ 
I still remember one day after he left, in the summer of 2000, I was at the bar with his cousin and we were talking about him and we both say : “ The woman that will marry him she will be very lucky ❤️
I still  can’t believe that that woman was me ❤️

We both were young,  free and wanted to be free until 2003 when he came for his cousin wedding. 
We were definitely more mature and when he asked me to come to Vancouver I said yes. So I came in October for 3 weeks just for a little vacation. 
Three weeks of sunshine in B.C. , he used to live in White Rock by the beach it was beautiful. We went everywhere and I fall in love of this city, every day sunshine
Every day was a magical day until the day that I had go back to Italy.
We were and still are in love and we decided that the right thing to do was to go back to Italy to talk with my family and the rest is history 
I must say that Im so happy of my choice, always fall your heart ❤️ and choose a man that respect you and your family ❤️

Sunday I made Chili con carne for Super Bowl celeb Sunday I made Chili con carne for Super Bowl celebration. 
My husband requested and I decided to dust off an old recipe that I used once so many years ago and never used again 😂
The original recipe has lot of 🌶 I adjusted everything on our taste. Instead of using cayenne pepper 🌶 I used Peperoncino Calabrese 🌶 that sometimes I use in my cooking. We like spicy food a bit but We dislike 🔥🔥🔥
We are from the North Of Italy so we enjoy mild spicy food 🍲 

The chili was good My husband really liked it, it was spiced enough the way he liked it and surprisingly my brother in law like it too.

After I posted on my story so many people asked me the recipe, here you go and hopefully nobody that love TexMex food gets offended by this recipe. 
Recipe:
🌶3 tbsp oil
🌶 1 onion chopped 
🌶 1 pounds ground beef 
🌶 1 tbsp Cumin ( i used half) 
🌶2 tbsp chipotle ( didn’t have it 😂)
🌶1 tbsp sugar
🌶 1 tbsp garlic powder 
🌶 tsp salt
🌶1 tsp black pepper
🌶3 tbsp tomatoes paste
🌶200 ml strained tomatoes 
🌶 1 cup black beans ( if you use from the can rinse them)
🌶 half cup beef broth
🌶 2 teaspoons red pepper
🌶 and a sprinkle of love

Method:
In a sauce pan put the oil and onion. Let it sweat and add the ground beef. Cook it very well and add all the spices, salt, pepper, garlic powder and tomatoes paste. Add also the broth, mix everything with wooden spoon and let it cook for couple hours on low heat covered. After that taste the chili and adjust if you need more spice or salt. Add now the beans and cook everything for other 30 minutes with a lid on it on low heat. When its ready let it rest for at least 30 minutes before to serve it, off the heat covered. 
I served it with warm tortillas wrap and sprinkled some cheddar cheese 🤤
