Pizza makes everyone happy, do you agree? My mom Pizza makes everyone happy, do you agree? 

My mom makes an amazing pizza, my nonna also makes an outstanding bread and pizza, me I failed before to master it 😄

I literally failed to make pizza so many times, I can’t even count how many. 
I remember one Sunday I was crying while I was throwing away the dead dough. 
Anyway I never lost faith because even in cooking we need faith 😊

My mother in law never made pizza until I gave her a recipe that I tried so many time and never worked with me. 
She was able to make an outstanding pizza with the recipe that I gave her, the kids still remember nonna’s pizza. 
Anyway making pizza or bread is difficult if you never made it before.
There are few important facts that I shared on my cookbook that helped me understand the science behind. 
I did read  so many books about pizza, yeast, rising, flours and still now Im not a professionist  but I can make a good, homemade style pizza and Im sure it will get better every time. Do you want to know why I was failing making Pizza Dough?

My message for you today is don’t loose faith, keep trying keep cooking.
My family ate so many flat bread before I was able to reach the best result and understand where the mistakes was. 
When you make pizza or bread you absolutely have to pay attention to little details, things that sounds easy sometimes are not. 

The recipe from my cookbook works like a charm ❤️ It has already made by few people and the BEST compliment was from an amazing lady last week that she wrote me “ finally a pizza that taste like the one that my mother in law makes” ❤️❤️
Am I the only one that can’t wait to fly to Ital Am I the only one that can’t wait to fly to Italy when all this is over?

When the lockdown started we decided to spend some times at my in law house. They are both gone sadly and my brother in law lives downstairs by himself. 
The yard outside is big and my father in law used to plant lots of vegetables every year, his garden was impeccable ❤️
Nowhere to go, nothing to do so we decided to plant our first garden vegetables. 
Both me and my husband never done it before but it sounded like a fun idea 😂
Even if I grew up with a mom that has her own garden vegetables I never understood anything or simply I didn’t want to because let’s be clear: it is a lot of work 😊
Life was amazing when my mother in law used to give me the vegetables already cleaned to bring home, also when I go to Italy my mom is the one that does everything in the garden 🥳

Now Im happy to say that planting our first garden was one of the best experience ever : from moving the dirt with a shovel ( never touched a shovel before), to decide what to plant, to plant everything and wait until they grow. 
I still remember waking up in the morning and go outside to see if anything grew, that was magic. 

Of course its a lot of work, weeding especially was annoying but there is nothing more rewarding than planting something and eating it at the end. 

My husband is very organized so he wrote everything on an agenda, whatever we planted , how long it took to grew , and how the plant reacted to the weather. It is actually neat but for the next time we know what to do and it will be easier.
We decided that our new house has to have enough space for a nice garden ❤️🇮🇹

Its soups season and If I have to choose my favour Its soups season and If I have to choose my favourite soup I think minestrone will be my favourite.
Making minestrone or any soup is very easy, you don’t need to buy premade soup full of salt and who knows what else, we can do better than that ❤️
When I make minestrone I usually
Use vegetables from my fridge, whatever I have I use it. 
I also like to add some kind of beans and I  usually don’t add pasta or rice but if you like you can. 
I also use broth, homemade of course, but if I don’t have it I just add water with cube bouillon, sometimes I forget  and I don’t use anything ❤️
Very important when you make minestrone is to use good oil evo so it can give a nice natural flavour to the vegetables before adding the water. 
Another great ingredients is Parmigiano Reggiano Crust, I always have them in the freezer because we don’t throw anything away, right? 
My kids favourite is minestrone soup all blended with some homemade pasta noodles inside. This is called passato di verdure/ creamy soups and they call it “ Nonna Soup”. My son also call it “ the soup that moves slow” 😂

Pasta alla puttanesca is a simple but tasty first course prepared with tomatoes, anchovies, capers, black olives, chili and lots of love! This pasta is one of my husband’s favourites. I introduced this dish to him after love brought us together under the same roof. I still remember the day when I added it to my cooking classes. My clients were very skeptical, but after the first taste, it was a huge success! I am very proud of all my students who have managed to recreate this sublime dish for their families.⁠

One of the common things that people tell me after they met me in person or on Social Media is how confident Im and how I m able to make them feel confident and loved ❤️

I feel very confident now  and I feel that I have so much love to give, the world need more love especially right now.
Before you start read below I want to say That Im happy the way my life went. Im happy and thankful that I grew up with a nice family in Valtellina ❤️❤️❤️❤️❤️❤️

I was not always so confident and full of positivity and love. 
All my life I felt that I had lots to give but I didn’t know how.
Unfortunately I suffered so much for the rejection of my biological father, a man that I consider a monster. 
All my life I really thought that something was wrong with me and I felt that I didn’t belong anywhere until I had my own children.

Unfortunately I always knew who my biological father was, we met when I was younger until one day he trashed me like an old garbage bag. 

For so many years I asked my self why, I thought it was my fault and of course I thought something was wrong with me.
Three years ago after my vacation in Italy I found out that he had other children with her long time lover ( he was already married with children). 
After that lovely discovery I decided to confront him so I called him.
I don’t want to write here how bad he made me feel, it was really disgusting and painful. 
I was devastated but relieved at the same time and after he insulted me on the phone I just said to him “ Karma is a b....” 
For the  last 3 years I focused on myself and on my own personal growth and I have to say right now I feel complete. I feel like myself and free from the monster, finally. 
Karma punished him really badly in June, I can’t say how but sometimes in June I bought Champagne and drunk it in his honour and his poor personality.
Also did I mention that he has kids my age? Yeah, of course they never wanted to have anything to do with me because I m the mistake, the shame something to hide and to keep distance. 
Well, June 2020 they all got what they deserved. Amen
Speaking your own truth is the most powerful tool, own it ❤️❤️❤️❤️

This is my recipe, as handed down from my mom. I really hope it becomes your favourite recipe as well, and I recommend learning to make lasagna with children and family. I always make lasagna with homemade fresh pasta, a trick passed down by my mother-in-law.⁠

Throwback Thursday to Christmas 2018 in Italy. Me Throwback Thursday to Christmas 2018 in Italy. 
Me, my mom and my daughter were making Gnocchi together ❤️❤️
Funny enough I wanted to put this picture on my cookbook but I could not find anymore until it came up on my FB feed yesterday. 

I learned to make gnocchi from my mom of course, she makes the best Gnocchi and Im so proud to say that my daughter already knows how to make them ❤️
Making Gnocchi at my mom house is a big event. She usually put a cloth on the table ( special cloth that she uses just for making Gnocchi) and when she cuts them she quickly pinch them with the small finger and quickly roll them. She doesn’t believe in the Gnocchi Board like I do 😂😂 
When the water boil she gently put the gnocchi put on a small plate and throw them in the boiling water. 
I do it differently : when I cut the gnocchi I put them in a small plate right away after the pinch. I do it this way because for people that don’t know how to make Gnocchi or people that never cooked before it can be intimidating to have a table full of Gnocchi, the cooking part is very fast and having the Gnocchi on a plate its easier. 
I taught so many Gnocchi classes and I know exactly how people feel and what make them uncomfortable ❤️

Making Gnocchi is such a great family activity, Cooking together is so important, also cooking for your family is such a great sign of love.

Ingredients for the fresh pasta:⁠
Eggs⁠
Flour⁠

For the tomato sauce:⁠
Tomato can or fresh tomatoes, oil, garlic or onion, basil if you have it, salt and pepper.⁠
⁠
Parmigiano Reggiano to serve and, of course, a sprinkle of love⁠
⁠
You will need a pasta machine or a rolling pin.⁠
⁠

Happy Heavenly Anniversary to my in laws that toda Happy Heavenly Anniversary to my in laws that today would be married for 53 years. 💓

In 2018 they were supposed to flight to Italy for a big 50th anniversary celebration with their family. 
Unfortunately it didn’t happened because my mother in law got diagnosed with cancer few days before the flight. 
Life is definitely unfair and unpredictable, I wouldn’t never thought that something like that would happened to our family ❤️

Both my in law told me stories about their wedding day, but let’s start from the beginning:
- They met in Italy in 1965, they lived pretty much in the same area 5 minutes away to each other. 
My father in law in 1966 decided that he wanted discover something different and make more money so he decided to Immigrate to Canada. 
He came first, worked and after almost a year she came too, it was November 1967.
They couldn’t live in the same house because they were not married yet so she had to stay in another house without him. 
In January 1968 they got married in Vancouver at Saint Francis Church, it was a cold day, they both didn’t have any family here but they had each other ❤️
My mother in law had to rent the dress because she couldn’t afford to buy one, she was just an immigrant landed to Vancouver the month before for love. 
She also told me that she didn’t know the girls in her bridal party, she didn’t know anyone yet at that time.
They went in honeymoon in Chilliwack and because it was snowing and so cold they stayed in their room for the whole time. 

In their 50 years together they had lots of good things, my father in law worked so hard to give a good future to the family.
My mother in law never worked, she stayed home to take care the house and their  two kids ❤️ 
The most important things were her kids and of course her 2 grandkids also her family in Italy 
When my daughter was born one of her family members thanked me for having made my mother in law become nonna, it was her dream.
